I've been with the Institute of Culinary Education for almost five years. And when we moved into our new facility down here in lower Manhattan we decided to construct what we call the chocolate lab. Inside the chocolate lab we have the capability to go from raw cocoa beans all the way through the several steps that it takes to make a finished chocolate bar. The chocolate making process begins with making the beans and we pride ourselves on the fact that we source the top 5- 10 % in terms of bean quality that's grown. Once we bring the raw beans into the lab we clean them, we sort them, and then it's on to the roster. Roasting is really important for flavor development. From there we winnow the beans. We're crushing the beans and separating the shell from the nib, and that's all about grinding that nib. We grind it to a coarse liquor at first, and then we refine it to that very, very refined The final part of the process is tempering and molding into bars and it's kind of a very delicate process but it gives the finished chocolate bar its characteristic shine and snap and melting qualities. The amazing thing is that each one of these The steps of the process really presents numerous variables that will affect the final qualities of the finished chocolate. [ MUSIC ]
